Unfortunately, I have now noticed several times that I cannot undo any steps, e.g. deleting sections. Even if I go to revisions and want to restore a previously saved version, this does not work.

Unfortunately, I cannot reproduce the issue. Please provide a screencast using https://jam.dev showing and explaining what’s happening and how to replicate it.
Also, please adjust the version since I assume you’re not using 1.12 beta
