I couldn’t replicate the issue. Could it be that you changed your WP timezone after publishing?
Would be great if you could take screenshots of the post’s publishing date & time, the {post_date:human_time_diff} output, and the WP timezone set in settings. Also knowing if your timezone is the same as the one set in WP would be helpful.
