If I have ACF or ACF Pro installed the Categories are not shown when inserting a new post. Posts don’t even have to include any defined custom fields.
Just the fact that ACF is installed causes the categories to be hidden. The only option there is with categories is to insert a new one - in which case the post will be assigned to that category as well as the Uncategorized category.
Any browser, MacBook, latest WP and latest Bricks.

Are you using the latest Bricks and ACF(Pro) version?
In general, I can say that I have been using ACF for years and I have never had this kind of problem (with or without Bricks as a theme). Please try the following one by one and see if the categories and featured images are displayed. Since we have no further reports on this, I don’t think it’s a Bricks bug at the moment (apart from the fact that the problem occurs in Gutenberg and not in Bricks).
deactivate all plugins except ACF(Pro). If everything is fine again, activate one plugin at a time and test again.
switch from Bricks to a standard theme like twentywentyfour.
Regarding bug reporting, jam.dev has several advantages over other screen recorders, as it tracks every single action (such as clicks) and displays console and network errors or the browser used. All this helps us enormously with bug reports, as we can recognize errors directly and have potential steps to reproduce a problem. In your case, however, the YouTube video is sufficient.
Well, I disabled all plugins and changed the theme to a standard WP theme. No problems without ACF, but the second ACF was activated (and only ACF) the problem came back again.
Conclusion: ACF and Gutenberg are not 100% compatible and it has nothing to do with Bricks.
I initially presented the problem to the ACF guys, but they also said it was not a problem arising from their plugin.
PODS worked fine although there were other problems.
Ok, thanks for your feedback. Then it seems to be something specific with your installation or the server setup - unfortunately I can’t provide any support for this in general, since it’s not related to Bricks.
