Is there some sort of global style that is forcing all headings to be bold? While that might work for some sites, I need more flexibility to control headings. I have tried to specify them manually, both in classes, and also in the global custom css, but no matter what I do, it seems like those styles get overridden with a weight of 700.

Inside the builder, click on Styles on the top left (next to Bricks logo).
Then the first tab Theme styles, and expand the Typography section. There you will find the All headings settings.
I do not see where it specifies weight in here. Just scaling.
In the Style Manager, I just see Bricks Wireframes
Okay, so I found where you were suggestingm but making changes does not appear to make changes on the front-end, in other words, same as what I had been experiencing.
There are no overrides in the element style panel, either.
Based upon the Global Styles Panel, that text should be 400 weight and dark brown, not 700 and bright orange.
So, I think I figured out that what I was trying to do was being overridden by a default set of styles from Bricks. When I saw wireframe in the style name, I figured it was just rudimentary structural styles and not more comprehensive styles.
