This is not isolated to just the color picker but to a number of popup elements in admin with sliders etc. It is a UI issue which I find a real pain when selecting colors and using the sliders to for example set transparency, if you mouse out of the popup while holding down the a mouse button e.g when using the value slider to one end or other of the slider it closes the popup and even worse re-opening any values you had when it closed are gone.

It would be better to disable clicking outside the popup as a close option, instead user must pick something or click the button that opened the popup and add a little x in the corner as another way, just not clicking outside the box. or if possible only onclick while outside the window not when moving the mouse outside while clicked.
